10 healthy foods you can prepare in advance to make 5 minute meals


Somehow over the last few years my taste for food has drastically changed. I don't know how it happened, but it seemed to be a slow progression. Maybe my tastebuds matured for healthier foods? I don't know. :)

Ten years ago I used to eat mostly pasta {lots of pasta!}, Lean Cuisines, tons of bread and prepackaged snack foods, and I never ate veggies unless they were from a can. And no joke, eating a salad for dinner was actually felt like some kind of cruel punishment {I almost can't believe it now!}. It wasn't until seven years ago after working for a real restaurant that I learned more about cooking and started to fall in love with good food. I started to love real vegetables!!

Then, after doing the Original Food Diet in 2012, I'd say my love for real food grew even stronger. I branched out into all kinds of squashes, mushrooms, grains, and even tofu. And it was fun. :)

And at the very end of 2012, sometime around the week after I found I out I was pregnant with #5, my appetite changed and all I could stand was bread and processed carbs {mainly in the form of Cool Ranch Doritos}. I usually don't get too sick when I'm pregnant, mostly just nauseous, but for that pregnancy, my even my beloved salad {favorite food ever} went out the door. I didn't even want to smell a vegetable. :) My appetite gradually got better, but I couldn't eat anything like I usually did.

Thankfully, few weeks after the baby was born my regular {weird} appetite started to return {hallelujah}, and since I've been nursing, I've been trying to eat a very balanced diet with more indulgences than I would usually enjoy so that I can keep my calories higher. :) 

With my hands full these days, I have to figure out ways to make foods in big enough quantities to last at least a meal or two. :) I like lunch to be easy and fast! :) But still be good food too, you know? Most of the time I eat what I feel like I need- usually a protein and a veggie or a carb. Also, If I'm eating real food, I try not to limit my quantity of food like I would with a processed portion.
Here are ten of my favorite foods I can prepare in advance for easy, healthy lunches that work for me in this season:


1. Rice.
I love short grain brown rice, and basmati made in our rice cooker. We buy both in bulk at Sam's Club and Costco. ;) Rice goes with or in nearly everything, so I don't season it until I use it. :) Salsa is a favorite rice topper at our house. If you are only eating real foods, I think you can eat 1 cup a day and be satisfied.

2. Quinoa.
I cook this in my rice maker now, and it's so easy to make several cups and store it in the fridge. I usually add garlic salt to taste. It's also a good source of protein. I like the red version! I get a big scoop out for lunch with a veggie or a protein to go with it and I'm good. :)

3. Sweet potatoes.
I much prefer baked to microwaved when it comes to potatoes. I stick several pierced ones in the oven at 400 degrees, all wrapped in foil individually and cooked until tender {about 45 min- 1 hour} and they are amazing to eat throughout the week. They need nothing added to be fantastic. :)

4. Tuna.
I love tuna because it's full of protein, and is still so light! I like a little seasoning on plain tuna like lemon pepper or something like citrus grill seasoning. :) Just open a can when you need it for an easy portion.

5. Ground turkey.
I mentioned before I make several pounds of this at one time and use it through the week. I like to freeze the smaller portions the first day I make it so that it tastes fresh and we can add it into whatever we like. I really like the 93/7 ratio for turkey.

6. Avocado.
God's natural butter. I never thought I would love avocado, but I do. Seasoning is good, but not required. I love mixing it in plain with my grains for a filling, amazing meal. I usually buy 5 a week, and my husband and I eat them like they're dessert. :) If you keep them in the fridge, hard green ones will last all week.

7. Chicken breast.
I love precooking my chicken for meals {tutorial here}, but when I was pregnant I couldn't handle the smell or taste of reheated chicken, so I bought the store version of precooked grilled chicken breast strips. I'm finally back for it now, but I still keep the store version on hand for whenever I need it. I'm all for whatever works for you when it comes to staying on course with healthier foods! :)


8. E. Texas Caviar.
It's been a while since I made this, but it's one of my favorites to keep on hand. The main problem with it is that it never lasts long enough. ;)


9. Beans
I'd say beans are the dietary staple at our house. We don't use lots of meat {we do like sandwich meat and the ones above!}, but beans are always a easy option. Soak them in a crockpot the night before, then rinse and turn them on with lots of water in the morning and they'll taste great by dinner!! I have tried lots of seasonings but I think just plenty of salt is the best.

We also keep a few 7 lb. cans of Bush's pinto beans on hand for fast food if we're in a pinch. I can't tell you how many times those big cans saved us from eating out. :) Even though they're way more expensive canned, $3.50 for lunch is so much better than $23.50 for lunch. :) A single can of black beans makes a great meal alone, too. Like the chicken, do what works for you! Canned is okay sometimes! :)


10. Salad.
Oh, sweet salad. I love it. I usually eat cabbage mix because it's so filling and $1 lb. and it is so good. I was so thankful when I could eat acidic dressings again. I usually eat Olive Garden dressing from Sam's Club, or raspberry vinaigrette with no corn syrup on it. :) Salad is always super easy to make in a hurry, and you can prepare a big batch of it every couple of days to make it even easier.



And those are my 10 favorites at the moment. I'm over the moon that I'm getting back to my old diet! And I'm so excited about summer coming- I'm thinking of all those fresh vegetables and I can't wait to enjoy them {unlike the preggo version of me last year!}.

original food menu plan #2 with a budget breakdown

Our original food diet meal plan for this week:

dinners:
day 1: black beans and quinoa
day 2: black bean "burritos" {blended beans, salsa, and rice in lettuce wraps}
day 3: raw zucchini pasta topped with avocado, lime, and tomatoes {recipe coming soon!}, rice, and salsa
day 4: east texas caviar in lettuce wraps {use leftover black beans)
day 5: raw lasagna {recipe very similar to this one} and baby carrots
day 6: dinner out
day 7: leftovers or asian veggies with tamari {wheat-free soy sauce}, orange, and ginger.

real food doesn't have to be expensive...

After doing this diet for the past few weeks, I think the most common misconception about eating real food is that you have to spend more money to eat well.

I've actually spent less money on groceries than usual because I'm not buying two or three loaves of bread, chips for $3-4 per lb., or lunch meat for $3.50 lb. Instead, the bulk of our diet comes from some of the cheapest, most filling foods: beans, rice, potatoes, lettuce, carrots, and oats- most of which are less than $1.50 per lb.

Many of this week's dinners are planned around black beans. Black beans are generally around $1 per lb. dried, and we eat 1-1.5 lbs. per meal. I make 3 lbs. at a time in our large crockpot- which should be enough for all of this week's meals.

Rice, potatoes and iceberg lettuce (like black beans) are also inexpensive to purchase. The bulk of our meals will come from these items.

Squashes make frequent appearances throughout the week. I've found squash to be the most satisfying food for me, so I eat it for most lunches. It generally costs $1.25-$1.50 per lb. A large spaghetti squash will provide most of my lunches for the week, while the hubs and kids tend to prefer beans for their lunches.


The most expensive meals on the menu are the ones with avocados. I plan to use one on day 3, and one on day 5. That will cost me $2 alone this week {pricey, compared to a family-sized portion of beans for $1!}. Quinoa is $5 per lb. for the organic version we use, so that will cost around $2 each time we eat it.

Nuts are the only real luxury item we eat, ringing in at $5-$6 per lb. We eat about 1/2 lb. per week of these as snacks and salad toppers.

The kids still eat their regular pizza or sandwiches and chips when we go out to eat, but at home, we've started eating only fresh fruits, nuts, seeds, and veggies for snacks, which can actually get pricier when you give out 4 oranges or apples at a time. We spend way more on this than we used to. At our house, fruit used to be a luxury and crackers the norm, but we're trying to reverse that! :)

I spent $130 last week buying groceries with a very similar menu and list, but stocking up on walnuts, almonds, quinoa, Starbucks coffee, spring water, basil, and lots of seeds that will last us for 2-3 weeks, so I expect that this week's bill will be much closer to $80- $85.

Phew. :D I've got the menu all planned...now I just need someone to come and do the shopping for me! ha!

the original food diet | week 2 update + new recipe

Has it been 13 days already? Wow!

Since we’ve been on the original food diet for almost two weeks, I thought it was about time for a personal status update:

Mentally:

The diet is getting easier and harder at the same time. I like how I feel physically, but some days I’ve almost lost my joy in eating, and I’d rather not even eat than eat what I have to. It’s puzzling, because I really had no idea that I loved eating as much as I do. I enjoy food. I thought I loved veggies, but I don’t enjoy eating them all the time. So that’s been a challenge.

We ate regular food on Easter at our family get-together. We decided to eat what was served instead of eating separately. We felt it was more important to eat there and enjoy it than to refuse what was given to us and eat our own food. People and life before food. :) It was actually mentally tough to leave the diet behind on day 8, but we did for one meal.

Eating regular food did not feel the same to my body as what I’d been eating for a week. We had chips and dip, potato salad, and the hubs ate two hot dogs. I felt crazy full almost instantly, and Rob was starving after a couple of plates. :P We didn’t even eat again that day, and when we came home, it was back to the diet. {which I’m starting to feel is our new normal. We were happy to eat plants again!}

Physically:

I feel great most of the time. I had headaches for a few days, but they’ve gone away. I feel lighter, and I didn’t realize how full my stomach was really staying until I started this diet. I don’t eat as much now, and I don’t have blood sugar crashes anymore. When I need to eat, I just feel extremely tired {and usually not even hungry}. And I have to eat proactively more now than I did before.

Body changes:

Size: I haven’t noticed as much of a change in my body as my hubs, but I do feel slimmer, and lighter. I might have lost 1/2 of an inch around my waist, and maybe 1-1.5 lbs. in 2 weeks but it’s hard to tell really, because it all varies so much through the week/month. Time will tell if the changes were merely a fluctuation.

Muscle: I really want to maintain my strength, so I’m interested to see what will happen as the diet goes on. So far I haven’t lost any muscle that I can tell.

Skin, hair, and nails: My skin looks better! My face looks smoother and shinier and I haven’t had a breakout in a while. I’m attributing it to all of the extra water I’m drinking, and the vitamins from all the veggies can’t hurt either, I’m sure. For the first time in my life, I’m eating nuts and avocados on a regular basis, too, so I think that might help the oil balance in my skin.

The man update:

In 13 days, Rob lost 6 lbs. and 2 inches in his waist. Unbelievable!

He’s also given up diet drinks cold turkey. He was consuming more than 100 oz. per day of them before we started. I’m so proud of him! He says he’s not hungry, and he loves the food I’ve been making him. {He looks amazing, and more cut than ever to me! He’s in better shape than he’s ever been, and the diet is showing that!}

Here’s his favorite recipe:

{I nicknamed it. heehee.}

{east} texas caviar

1 can of chickpeas, drained and rinsed {fresh- 2 cups}

1 can of black beans, drained and rinsed {fresh- 2 cups}

1 can corn, drained and rinsed {fresh-2 cups}

1 cup cherry tomatoes, chopped

3 green onions, chopped

lime juice {3 limes}, dash of cayenne, garlic and salt to taste {be generous here!}

Combine all ingredients, and let marinate in refrigerator for 30 minutes. Serve on lettuce or rice.

And we love kale chips now too!

So far, this diet is difficult but worth it! We eat as much as we want, and our bodies are still changing. It’s a pretty great deal! It might be early to tell, but the original food diet seems like the magic “pill” everyone is searching for! It’s crazy!

the original food diet | "the rules"

Whole, real, unprocessed food.

Starting April 1, that's all I will eat for 40 days.


In case you might have missed last Friday’s announcement, I've decided to go crazy and conduct an experiment on myself! :) I'm going to change my diet significantly for the next few weeks.

It's going to be a big deal for this food-lover! I have no idea what will happen, but I'm hoping to see all kinds of benefits in my body and mind.

Today I'm setting up the "rules" for my experiment! I'm so, so excited. This is something I've dreamed about doing for many years, and I can't wait to see what happens!

Here's the deal: I'm going to eat natural food. I'm going to eat only the foods from the ground that God made, and I'm going to try to eat them in their original form.

 

the theory behind this experiment

Here's what I'm thinking... if we were to step back into the garden of Eden, and we had all of the food God made at our fingertips to eat, what would our health look like? How much are we really affected by what we eat now?

And what were we originally intended to eat before the fall of man? Definitely not meat, right?

What do we know God provided for them to eat in that perfect place? For sure? Plants- fruit from the trees.

Genesis 1:29-30 tells us what humans and animals were originally given to eat:

29 And God said, “Behold, I have given you every plant yielding seed that is on the face of all the earth, and every tree with seed in its fruit. You shall have them for food. 30 And to every beast of the earth and to every bird of the heavens and to everything that creeps on the earth, everything that has the breath of life, I have given every green plant for food.” And it was so.

So that's what I want to eat too. Things that are from plants and tree yielding seeds. No meats. No dairy products. No eggs.

Crazy, right?


I know. It totally is! I've never done anything like this before. :)

 

We basically have the world's plants at our fingertips. We are abundantly blessed with tons of food choices here. We have more than enough options to eat a balanced diet. I decided that I’m going for it! It’s a little scary, but entirely possible!

 

the original food diet “rules”

I'm creating my own scheme of foods based on what I've studied. I'm calling it the "original food" diet. For 40 days, I’ll be following these guidelines for what I eat! :)

 

My allowed foods are any naturally occurring plant-based foods:

vegetables
fruit
legumes
whole grains
nuts
seasonings from seed plants

 

Foods I'll be avoiding: anything artificially or factory-created or any animal meat or animal product.

bread
cookies
cereals
pasta
refined sugars
dairy
eggs
artificial sweeteners {this is huge for me!}

I know some of you are planning to join me on this journey, and I couldn't be more excited to have your company! For those of you following along, I want to encourage you to make it personal- make it work for you.
 
There is no Biblical law that says you have to eat any certain type of food. There are no Biblical mandates about eating or not eating certain foods now. This is not right and wrong, this is an experiment for me just about choosing carefully what I add to my body. :)

I encourage you to study food and really think about what goes in, and decide what you will eat and not eat. :) I promise, I won't be upset if you eat pasta and cheese! This is just what I've decided to do for me. :D

My plan was to do this by myself, but my hubs started listening and reading about it, and he decided he's going to do it with me! Yay! So we will get a man's perspective and since he works out, he's going to do measurements to see how it works with muscle-building exercise, too!

I'll be tracking what I eat, and what I'm feeling, and how it's affecting my body and energy levels.  I'll be posting pictures of my meals, and I'll be sharing my favorite recipes along the way. I’ve created a pinterest board to share posts I love and recipes too. :)

I’ll be sharing my menu plan as soon as I can- but the really the whole idea is, if it’s from a plant with seeds, you can eat it. :)  {I’ll be saying goodbye to all of my favorite processed things in the next 48 hours! :P}

food on friday :: introducing the original food diet

I'm excited to bring you a brand new series for {food on friday}! You might've heard a little bit about it over here... ;)

I'm finishing up the details this week for a crazy experiment I will start in April. I'll be following a strict whole foods diet, and will be sharing about it here on Fridays!

I'm going to cut out refined and processed foods {and phase out artificial sweeteners too, hopefully} over the next 6-8 weeks, which I'm hoping will be long enough to create a life-long habit.

The idea behind this project is that I want to eat natural, real food in the form in which God made it. For example, instead of eating bread, I'm going to eat only whole wheat grains boiled. Instead of cereal, I'll eat just natural oatmeal.

I think it's going to be hard... {bye, bye, sweet pre-packaged chocolate chip fiber granola bars...! I'll miss you!}, but it won't about tracking calories as much as it will be about tracking actual intake. I want to consider what's really going in, and how does it affect my body and mind?

I'll be tracking any differences I notice in the way I feel {physically and mentally}, exercise, and look {skin, nails, hair, body composition}. I'm so excited! Slowly but surely I hope to carry it on to the whole family. :D

I love a good challenge, and though I eat well it's hard for me not to eat something junk food related like a bite of cookie or a handful of chips or cereal at least a couple times a day. I also love Splenda, but I would be thrilled to eliminate it from my diet. I'm not a fan of ingesting large amounts of chemicals! {though I do it! sheesh!}

Oh, and I completely love desserts. Sweets are my downfall! {are they for you, too?} I've never gone without them completely. Wow.

I'm both nervous and excited. I won't be crazy obsessive about not eating something not on the plan if it's presented to me, but I will try my best to avoid it when I can to see how I really feel when I only eat the food God has provided in it's natural form.

I'm hoping this project will be like a spring cleaning for my body, so to speak. :) I'll be setting up the rules for my own experiment right here next Friday, and you're welcome to join me in the challenge if you want to! I'd love to hear about your progress!

I will be posting lots of real food resources and recipes along the way {as well as spilling the beans about what it's like to suddenly change your diet ;)}. Oh, and for fun we can have a little Twitter support group called #foodsGodmade throughout the week if you want to ask questions or post your thoughts! :D

One quick question for you though: have you ever strictly followed a real food diet? I'd love to hear your experience! Any recipes or resources you'd recommend? {there were some awesome ones you guys posted over on facebook!}
